Water makes up around 60% of the human body, is vital to life, and is at the center of human existence. A new exhibition that puts a renewed focus on water is currently open at ISSEY MIYAKE GINZA / 445 in Ginza, Tokyo and ISSEY MIYAKE KYOTO.
Fukiko Yokoyama, a culinary artist, takes a unique approach in her consideration of people, water, and food. The food she creates isn’t limited to the simple category of “washoku” (Japanese food) and instead sets its sights wider and more fundamentally, to reflect the natural world itself. Co-authored with photographer Shigeru Akimoto, Yokoyama published “Hyakumi Saisai” (1990, Libro Port), in which are all sorts of dishes that brim with the vitality of their ingredients, beautifully plated up on dishware created by artists like Lucy Rie and Rosanjin.
This exhibition displays photographs from “Hyakumi Saisai” and also features an installation which incorporates the smells of dashi stock and vegetables, sound, as well as hogushi gasuri (a textile reminiscent of kombu seaweed). Through a multifaceted approach that inspires all the senses, it encourages visitors to rediscover water as the source of all life. The text for the exhibition was written by Kosuke Ide, Subsequence’s editor-in-chief.
